Rafael has a degree in Biological Sciences (University of Murcia). He holds a Master’s degree and a PhD with European mention in Biology (University of Murcia). Rafael performed his postdoctoral stay in the Micronutriments, Métabolisme et Signatures Biologiques group associated with the Human Nutrition Unit at the Institut National de la Recherche Agronomique in Clermont-Ferrand (France). During the year 2010 he spent 6 months at the Institute of Biological, Environmental and Rural Sciences of Aberystwyth University (United Kingdom). Currently, he is a “Ramon y Cajal” scientist. He has published above 35 indexed research articles and above 15 book chapters.

His scientific career has been centred on the study of polyphenols, measuring their content in food plants and/or evaluating their bioavailability and bioactivity. Nowadays, his principal line of work is focused on the development and application of the metabolomics in the study of the relationship between the consumption of fruit-and-vegetable-enriched diet (rich in polyphenols), such as the Mediterranean Diet  and the health in the PREDIMED thematic network.
